Students learned about jams, jellies, fruit butters, marmalades, preserves and conserves during the Jam Session: Preserving Jams and Jellies class on Monday, July 24, at the Sitka Kitch community rental commercial kitchen. This was the fourth of six scheduled classes in the Preserving the Harvest food preservation class series offered this summer.

The class was taught by Lisa Sadleir-Hart, a Sitka dietitian and health educator who has taught several cooking and food preservation classes for the Sitka Kitch. In this class, students learned how to make strawberry-kiwi jam, a blueberry conserve (with lemon, orange and raisins), a rhubarb-strawberry conserve (with cranberries or raisins and walnuts), and plum jam.

This was the fourth class in the Preserving the Harvest food preservation class series, which is sponsored by the SouthEast Alaska Regional Health Consortium (SEARHC). The other classes in the series are (underlined titles take you to the class registration page):

Date set for Sitka Kitch’s Preserving the Harvest class Ring Around The Rose Hip

Lisa Sadleir-Hart, MPH, RDN, will offer the fifth class in the Preserving the Harvest class series, Ring Around The Rose Hip, from 6-8:30 p.m. on Monday, Sept. 18, at Sitka Kitch. Students will learn how to harvest rose hips, prepare rose hip puree for long term storage and prepare recipes using the puree.

Cost is $27.50 and, thanks to a donation from the SouthEast Alaska Regional Health Consortium (SEARHC), the food and supply fee will be minimal. Registration is capped at 10 students, so sign up early to secure your space in this fifth food preservation class of the season.

Scenes from the Sitka Kitch’s Preserving the Harvest class on simple pickles and sauerkraut

Students learned how to make pickled squash and sauerkraut during the Simple Pickles and Sauerkraut class on Tuesday, July 11, at the Sitka Kitch community rental commercial kitchen. This was the third of six scheduled classes in the Preserving the Harvest food preservation class series offered this summer.

The class was taught by Lisa Sadleir-Hart, a Sitka dietitian and health educator who has taught several cooking and food preservation classes for the Sitka Kitch. In this class, students learned how to make a variety of fermented foods, with the focus on squash pickles and sauerkraut (many of the recipes came from the food preservation book So Easy To Preserve, which is produced by the University of Georgia with the book’s meat and fish recipes coming from the University of Alaska Fairbanks Cooperative Extension Service). She also discussed how probiotics help with digestion and gut health.

This was the third class in the Preserving the Harvest food preservation class series, which is sponsored by the SouthEast Alaska Regional Health Consortium (SEARHC). The other classes in the series are (underlined titles take you to the class registration page):

Students learned how to make a variety of dishes featuring rhubarb in the Rambunctious Rhubarb: Creative Ways To Use Rhubarb class on Monday, June 26, at the Sitka Kitch community rental commercial kitchen. This was the second of six scheduled classes in the Preserving the Harvest food preservation class series offered this summer.

The class was taught by Lisa Sadleir-Hart, a Sitka dietitian and health educator who has taught several cooking and food preservation classes for the Sitka Kitch. In this class, students learned how to make a curried rhubarb lentils dish (served over rice), a rhubarb chutney, a jalapeño rhubarb chutney, rhubarb pickles, rhubarb ketchup, and a rhubarb salsa. (Most of the recipes came from the book The Joy Of Rhubarb).

Students learned how to make fruit leathers and how to dehydrate a variety of fruits and vegetables in the Just Dry It: Intro to Food Dehydration class on Monday, June 12, at the Sitka Kitch community rental commercial kitchen. Sitka Kitch to offer a Preserving the Harvest series of food preservation classes this summer

You grew it, harvested it and/or caught it, so now what do you do? The Sitka Kitch community rental commercial kitchen will be offering the Preserving the Harvest class series to teach Sitkans how to store the summer’s bounty so they can use it during the winter. This class series features a community canning session and six classes covering a variety of food preservation methods. Students will learn how to safely preserve their food, so it won’t spoil or cause illness. The classes on schedule are (class titles underlined and in green are direct links to the class registration page):

  • Clear The Freezer; Fill The Pantry5-9 p.m., Tuesday, May 30, Community canning session for your leftover fish, meat, berries, etc. Take home and/or trade what you make with others. We provide the canners, herbs/spices, recipes, three jars, and guided help where needed. Bring additional jars and ingredients, otherwise not provided. Canning session hosted by UAF Cooperative Extension Service. There is a $10 registration fee. Register by Monday, May 29, to make sure it happens. Sitka Kitch to host Food Budgeting 101 class on Monday, May 15

Having trouble making your food budget balance each month?  Looking for ways to shave some money off your food costs?

The Sitka Kitch community rental commercial kitchen will offer a basic food budgeting class from 7-8:30 p.m. on Monday, May 15, at the Sitka Kitch (505 Sawmill Creek Road, inside First Presbyterian Church). The class will be taught by Sitka food and nutrition educator Lisa Sadleir-Hart, MPH, RDN, who will show you how to maximize your food dollar while also planning nutritious and tasty meals. kitch_logo_mainWith a mission to “Educate, Incubate, Cultivate,” the Sitka Kitch community rental commercial kitchen serves a variety of functions to improve food security in Sitka. It’s a classroom, a maker space and a community meeting place.

The Sitka Kitch project was a result of the 2013 Sitka Health Summit and is coordinated by the Sitka Conservation Society. Located inside the First Presbyterian Church (505 Sawmill Creek Road), the Sitka Kitch is best known for the variety of cooking and food preservation classes it regularly hosts.

Right now, registration is open for five classes in a Cooking Around The World series, where a variety of instructors will teach students international dishes from Morocco, Chile, Thailand, Austria (strudel), and Turkey. Registration also is open for a five-class series called “Nourish: Using Food As Medicine For Optimum Health,” taught during National Nutrition Month (March) by Sitka nutritionist Holly Marban.

The Sitka Kitch plans a series of food preservation classes this summer, and may host a cottage foods entrepreneurship class in the future. It also has offered basic culinary skills and Cooking From Scratch classes in recent months. In addition, the Sitka Spruce Tips 4H Club has hosted cooking and food preservation classes for kids at the Sitka Kitch.

The Sitka Kitch offers a full schedule of classes because learning how to cook and preserve your own food allows Sitkans to improve their nutrition and extend their food budgets.

“The Sitka Kitch programming team already has plans underway for a dynamic 2017 Preserving the Harvest series,” said Lisa Sadleir-Hart, a member of the Sitka Kitch advisory team. “In addition to some old time favorites like pickling, jam, jelly and fruit butter classes, the Sitka Kitch team is hoping to offer classes focused on local foods and medicinals like seaweed, devil’s club, rhubarb and rosehips. June will showcase a ‘Clean Out Your Freezer’ class and an ‘Introduction to Food Dehydration’ class as well.”

While it isn’t as well known as the classes, the Sitka Kitch also provides an Alaska Department of Environmental Conservation-certified commercial kitchen for local cottage food entrepreneurs to use as a maker space. One of the businesses that rents the Sitka Kitch (by the hour) is Simple Pleasures, a Sitka company that sells jams, jellies, kelp pickles and other products around the state. In addition, other groups have used the Sitka Kitch as a meeting venue, such as the Sitka Conservation Society, which hosted its 2016 annual meeting in the Sitka Kitch.

“The Sitka Conservation Society is proud of the Sitka Kitch’s work to build community connection and celebrate local, healthy and delicious food,” said Sitka Conservation Society Community Catalyst Chandler O’Connell, another member of the Sitka Kitch advisory team. “We hope that the community kitchen will continue to be a positive space for Sitkans to come together and share their skills.”

This class was taught by Callie Simmons, who works for Sitka Conservation Society and helped teach cooking and food preservation classes to the Sitka Spruce Tips 4-H club. Callie was one of seven Sitka residents who took a Food Preservation Instructor certification course in May from the University of Alaska Fairbanks Cooperative Extension Service.

This series includes a whole-grain breads baking class using the Tassajara technique on Monday, Nov. 7; a class on making homemade yogurt from powdered milk class on Monday, Nov. 14 (this class was rescheduled from an earlier date); and a Winter Morning Creations class featuring baked or fried pancakes from around the world on Monday, Dec. 5. All classes are from 6-8:30 p.m. at the Sitka Kitch (located in First Presbyterian Church at 515 Sawmill Creek Road), and all three classes will be taught by Lisa Sadleir-Hart.

The classes cost $27.50 per student, plus a food/supply fee shared among the students in the class. Space is limited and we need at least eight students for the class to happen.
