Sitka Kitch to host ‘Preservation/Fermentation 102 With Kayla Caprice’ class on July 29

Learn about the science behind fermentation and its benefits to your body during the upcoming Sitka Kitch class, Preservation/Fermentation 102 With Kayla Caprice. This class takes place from 6-8:30 p.m. on Monday, July 29, at the new location of the Sitka Kitch community rental commercial kitchen at the Sitka Lutheran Church (224 Lincoln Street, please use the back entrance through the alley by the former location Bev’s Flowers & Gifts, off Harbor Drive). This class is part of a new Cooking With Kayla Caprice class series this summer, and is a fundraiser for the Sitka Kitch.

“We will go back over the information from Preservation/Fermentation 101, about the science of fermentation and bacteria, and gut health. We will talk about local ingredients, foraging, and preserves. We will preserve lemons, and one preserved seafood,” Kayla wrote in her class description. Kayla currently works as a line cook at Ludvig’s Bistro in Sitka.

Kayla, hails from the Southeast coast, more specifically, Florida. She grew up around the ocean and fishing. Her mother was a chef and Food Network was her favorite channel growing up. She has a background in early childhood development and school-age instruction, with an emphasis on cooking and nutrition. She moved to Seattle three years ago to pursue her love of cooking, learning, teaching, and community involvement.

She has been helping educate adults and youth on cooking, nutrition and the food system with The Beechers Foundation in Seattle for more than two years. There she runs before- and after-school programs with cooking and baking clubs, as well as the school garden. She also assists in classes at Culinary Essentials in Ballard under Chef Nora Dummer, cooked at the Artist Home for the Doe Bay Music Festival on Orcas Island, worked at Firefly Kitchens (a fermentation company in Ballard), and taught the culinary summer camp at The Stroum Jewish Community Center on Mercer Island in Washington. She is currently a line cook at Ludvig’s Bistro in Sitka.

“Cooking for yourself is very important to me, as is loving good food,” Kayla wrote. “I believe everyone and anyone should have access to good food and be able to feed themselves, and the tools they need in order to do so.”

The Garden Show returns to KCAW-Raven Radio spring programming lineup for 28th year

For 28 years, Mollie Kabler and Kitty LaBounty have taken to the KCAW-Raven Radio airwaves during the spring months to broadcast The Garden Show.

This year there’s a change to the show, as the show will hold three scheduled sessions from 10:30-11 a.m. on Saturdays, May 11, May 25, and June 15, when people can call in with gardening questions. In past years the show aired from April through June, or longer into the summer if work schedules permit. Kitty has a regular music show (Hometown Brew) from 2-4 p.m. on Thursdays, and sometimes the half-hour Garden Shows may take place during her program.

Garden Show topics include timely tasks for gardening in Southeast Alaska, taking on-air questions, and themes around basic and more advanced gardening of vegetables, flowers, fruit, trees, etc. The station’s website recently posted a news item about the upcoming schedule that also had links to previous shows.

Mollie and Kitty each have been gardening in Sitka for more than 28 years, and they also have significant gardening experience from their childhoods in Wisconsin (Mollie) and Oregon (Kitty). They both are certified as Master Gardeners, after completing the class series offered by the University of Alaska Fairbanks Cooperative Extension Service.

UAS-Sitka Campus to host annual class on how to identify Southeast Alaska mushrooms

The University of Alaska Southeast-Sitka Campus Office of Continuing Education will host the class “Southeast Mushrooms: With Kitty LaBounty” this weekend.

This three-day class takes place from 7-8:30 p.m. on Thursday, Sept. 6, from 10 a.m. to 4 p.m. on Saturday, Sept. 8, and from 1-4 p.m. on Sunday, Sept. 9, at the UAS-Sitka Campus (with field trips). The course fee is $50 and students should dress for the outdoors, bring waxed paper and a bucket for gathering.

This course is designed to introduce students to the mushroom flora of Southeast Alaska. The focus will be on the use of taxonomic keys for identification of fungi and recognition of both edible and poisonous mushrooms. Cooking and preservation of mushrooms will be discussed. Field trips are followed by in-class identification of collected mushrooms.

In addition to the Southeast Mushrooms class, the next Natural History Seminar presents “Mushroom Poisoning and Mycotoxins: The bad side of eating mushrooms and moldy food.” This presentation with Sam David starts at 7:30 p.m. on Thursday, Sept. 13, in Room 229 on the UAS Sitka Campus.

UAS Sitka Campus offers ‘Flora of Southeast Alaska’ course as a hybrid class

Flora of Southeastern Alaska, a biology class taught by University of Alaska Southeast Sitka Campus associate professor Kitty LaBounty, is back for its fourth year.

The DNA of most traditional botany classes is to gather students around a table of samples and look at them in a face-to-face classroom setting. By offering Flora of Southeast Alaska as both a hybrid local and distance-delivery (eLearning) class, students from anywhere can get up to speed on how to identify the common native trees, shrubs and herbs of southeast and south central Alaska. Local students can participate in the lectures on campus, while students across Alaska can see the imagery online and hear the lectures either live or via digital recording.

Flora of Southeast Alaska is a one-credit, 11-week workshop. The focus will be on identification of common species and attaining an understanding of their place in the ecosystem of Southeast Alaska. Students will discover how these plants interact with other plants and animals, and how humans use these plants for food, fuel, medicine, or simply enjoyment.

In addition to illustrated weekly lectures, there will be written exercises and “check for understanding” activities. The class is available to any student without prerequisites. It does not count as credit toward a biology major or as a science elective at UAS.

Professor LaBounty brings her lifelong passion as a gardener and scientist to this topic, along with more than 25 years experience working on plant identification for state, federal and nonprofit agencies in Alaska.

The class will meet from 5:30-7 p.m. on Thursdays from Feb. 15 to May 5 — with time off for spring break. The cost is $202 for the class, plus $32 in registration fees. Students will need to buy a copy of Native Plants of Southeast Alaska, by Judy Kathryn Hall, or a copy of Plants of the Pacific Northwest Coast, by Jim Pojar and Andy MacKinnon, or both.
