Southeast Alaska Farmers Summit to host virtual farm tours on Feb. 26

The 2022 Southeast Alaska Farmers Summit may have been postponed until 2023, due to Covid-19, but there’s still a way for Southeast growers to connect this month. The Southeast Alaska Farmers Summit will host virtual farm tours from 9 a.m. to just past noon on Saturday, Feb,. 26, via Zoom. This will be a relaxed and informal event.

“Whether you are a farmer, gardener, agricultural industry professional, or local food enthusiast, this event is for you,” event organizers Bo Varsano and Marja Smets of Farragut Farm near Petersburg wrote in an email. “Everyone is welcome to ‘Zoom in’ on a snapshot of what agriculture looks like in Southeast Alaska today. Three regional farmers — Ivy Patch Produce in Wrangell, Foundroot in Haines and St. Peter’s Fellowship Farm in Sitka — will be sharing photos and stories of their farming operations, with plenty of time allotted for questions from the audience.”

After a welcome and introduction from 9-9:30 a.m., Katherine Ivy of Ivy Patch Produce in Wrangell will give a talk and show photos of her operation from 9:30-10:15 a.m. Leah Wagner and Nick Schlosstein of Foundroot in Haines will present from 10:15-11 a.m. After a short break from 11-11:10 a.m., Laura Schmidt of St. Peter’s Fellowship Farm (operated by the Sitka Local Foods Network) will speak from 11:10-11:55 a.m. There will be closing remarks at noon.

“The 2022 Southeast Alaska Farmers Summit has been postponed until February 2023,” Bo and Marja wrote. “If you were planning on attending that event, this is a great opportunity to touch base and make connections in the meantime.”

Sitka Kitch to offer Cooking With Culture class on how to make Tanzanian coconut chicken with Nalani James (Registration deadline extended to Jan. 20)

Are you a coconut lover? Join the Sitka Kitch as Nalani James teaches a virtual class on how to make Tanzanian coconut chicken as part of the Cooking With Culture class series. This class takes place from 5-6:30 p.m. on Saturday, Jan. 22, via Zoom, and kicks off the second year of the Cooking With Culture class series.

Nalani chose this East African dish, also known as Kuku Paka, for the wintertime, in celebration of spices being the “original medicine.” Spices not only add flavor, but also boost your health and immunity. This recipe has a medley of spices that will thrill your taste buds and have your spice cabinets celebrating all your selections. We invite you to try out this warm recipe that will delight and surprise everyone with your culinary skills of flavonoids.

Nalani has offered many classes in Sitka and has been successfully teaching to the community special dishes to her soul.

The class cost is $20, and we need at least eight people registered to make the class happen. Join the Sitka Kitch as Nalani James teaches a virtual class on how to make Hungarian mushroom soup as part of the Cooking With Culture class series.  This class takes place from 5-6:30 p.m. on Sunday, Dec. 12, via Zoom.

This vibrant composition is great for a meat substitute at dinner parties. If you love a good bisque soup this is for you. Flavonoids and earthy textures make this a perfect winter dinner. Nalani selected this soup as she would like to show you what you can do with fresh herbs in soup for winter time.

Sitka Kitch to host Cooking With Culture: Using Farmers To Families Food Boxes With Nalani James class April 16 (RESCHEDULED TO MAY 21)

Are you one in one of the roughly 1,400 families who have been getting a Farmers To Families food box each week in Sitka? Are you looking for inspiration on how to use some of the food items in each box?

Nalani James will teach a free, virtual Sitka Kitch class, Cooking With Culture: Using Farmers To Families Food Boxes class from 5-7 p.m. on Friday, April 16, using Zoom. Thanks to a partnership with Sitka Moose Lodge No. 1350, the Sitka Kitch community rental commercial kitchen will offer this class for free. Even though the class is free, we need people to register by late Tuesday night, April 13, so we can send out the Zoom link and ingredient list. Since this is a free class and we have limited space, we encourage families to register under one registration spot and share the screen.

(NOTE: This class has been rescheduled for 5-7 p.m. on Friday, May 21, and there are a limited number of new spots available in the class. The new registration deadline is Tuesday night, May 18. People who registered for the original class are registered for the rescheduled date.)

The menu for this class hasn’t been set, since the list of items in the Farmers To Families food boxes changes from month to month. The menu will be tailored to the box contents for April, once we know what they are. In recent months the boxes have contained potatoes, apples, onions, baby carrots or cabbage, milk, yogurt (plain or flavored), sour cream, hot dogs (or canned salmon), and smoked chicken leg quarters. (UPDATE: The menu will be chicken with fun sides using carrots, onions, potatoes, plus beer-battered onion rings with a non-alcoholic version available.)

Nalani is somewhat new to Sitka, having moved here about two years ago. She occasionally had a baked goods booth at the 2019 Sitka Farmers Markets, and she became market co-manager in 2020. In March, she was one of the winners of the Sitka Food Business Innovation Contest with her egg business, Eggstravagant. Nalani loves to have ethnic foods from the regional area and works to simulate the flavors and textures of the dish. She has been cooking elaborate dishes at the age of 10 with the free will of her parents, and loves being a cooking chemist.

Sitka Kitch to offer Cooking With Nalani James: Salmon Croquettes class March 19 using Zoom

Looking for a way to use up some leftover salmon? Do you have a lot of salmon meat scrapings that didn’t make it into the filets? The Sitka Kitch will host a virtual Cooking  With Nalani James: Salmon Croquettes class from 5:30-7 p.m. on Friday, March 19, using Zoom (NOTE, this is a date change from the original post).

Croquettes originated in France in about 1898 by the founder of classical French cuisine, Escoffier. They were originally made of beef, leftovers that needed to be used up. We will include an Alaska twist by using ground salmon for this recipe, with a couple of sides to make it a full meal.

Sitka Kitch to host virtual two-part doughnut workshop with chef Renée Trafton

It’s time to make the doughnuts. It’s time to make the doughnuts. Or at least it’s time to learn how to make the doughnuts.

The Sitka Kitch community rental commercial kitchen will teach a two-part online class on how to make doughnuts at home. This family oriented class will be taught by Beak restaurant chef-owner Renée Jakaitis Trafton and takes place from 7-7:30 p.m. on Monday, Dec. 28, and from 8:30-10 a.m. on Tuesday, Dec. 29, using Zoom. This class is a fundraiser for the Sitka Kitch.

During this class, students will learn to make a delicious and special treat you can share with your family over the holiday break. On Monday evening, participants will make the dough and let it sit overnight. On Tuesday morning, the workshop will continue with completing the donuts and making three different icings for a variety of flavors  (simple glaze, cinnamon sugar, and chocolate buttercream).

This is a virtual class taught from the comfort of your own kitchen via Zoom. The class cost is $40 for each household, and families are encouraged to participate together. Ingredients are not provided; however a list of ingredients and equipment needed will be sent to all who are registered on Saturday, Dec. 26. The recipe used in class will make about 14 donuts.

Renee Jakaitis Trafton is the chef and owner at Beak Restaurant, and a frequent teacher of Sitka Kitch cooking classes. She stumbled into making donuts as a special for Alaska Day in 2017, and has been making them for Sunday brunch at Beak ever since.

Sitka Kitch to host virtual Cozy Seasonal Salads class with SEARHC health educator Holly Marban

Cooler temperatures mean we’re craving comfort food. Enjoy a night of inspiration to celebrate seasonal vegetables and warm, cozy flavors without tipping the scale.

SEARHC Health Educator Holly Marban, MS, will teach a virtual class, Cozy Seasonal Salads, from 5:30-7 p.m. on Thursday, Dec. 10, using Zoom. Due to the recent spike in local COVID-19 cases, the Sitka Kitch community rental commercial kitchen is back to teaching virtual classes. This class is a fundraiser for the Sitka Kitch, and it is sponsored by the SouthEast Alaska Regional Health Consortium (SEARHC), in partnership with the Sitka Kitch.

Holly works in the SEARHC Health Promotion Department as the clinical program coordinator for the SEARHC WISEWOMAN Women’s Health Program in Sitka, where she supports women in making healthy lifestyle changes to reduce cardiovascular risk factors and prevent breast and cervical cancers. Holly holds a master’s degree in nutrition, has a background in health and wellness coaching, and feels passionate about good food and cooking. She enjoys sharing her love of food, nutrition, and wellness with others through cooking classes, community presentations, or individual coaching.

A nutrition educator and certified health coach, Holly will walk you through creative salad recipes that you can feel good about adding to your workweek lunch rotation or proudly displaying on your holiday dinner table. These recipes are full of winter greens and sweet-savory roasted vegetables, brightened with fresh herbs, sparkling with dried fruits or toasted nuts and seeds, and elevated by a balanced and flavorful dressing. Cook along from the comfort of your own kitchen.

Holly plans to teach three different salads in this class. The menu includes:

  • Winter tabbouleh salad with roasted squash, walnuts, and chard
  • Citrus, fennel, and radicchio salad
  • Kale salad with winter squash, pumpkin seeds, and roasted shallot vinaigrette

The cost per person for this virtual class is $30 (our regular price for in-person classes is $40). This includes a package of most of the ingredients (students will need to provide some staple items), plus access to the class. Ingredients will be delivered to your door, so make sure to give us your home address with your other contact information when you register. Some ingredients will be measured out in smaller portions.

Please have the following staple ingredients at home, as they will not be included in the ingredients delivery — salt, pepper, olive oil, Dijon mustard, vinegar (apple cider, white wine, red wine). You also can have the following optional ingredients if you’d like — feta cheese, goat cheese, and/or one avocado.
