Scenes from the Sitka Kitch’s Winter Baking Series class Sourdough Bread With Carolyn Rice

Students learned how to bake sourdough bread using a sourdough starter named Xavier during the first class of the Sitka Kitch‘s Winner Baking Series, Sourdough Bread With Carolyn Rice on Tuesday, Jan. 14, at the Sitka Kitch rental commercial kitchen.

Carolyn is an Alaska Fellow working with the Sitka Conservation Society and USDA Forest Service, and her class taught how to create and feed a sourdough starter, as well as how to bake sourdough bread using a variety of bread flours. She also explained why she named her sourdough starter Xavier and why others should give their starters a name. Students were able to take home a small bit of Xavier so they could build their own sourdough starters, and they each took home a ball of bread dough to proof overnight and bake the next day.

The next class in the Winter Baking Series is Bagels With Robin Sherman, which takes place from 5:30-8:30 p.m. on Tuesday, Jan. 28, at the Sitka Kitch (note the earlier starting time than our usual evening classes). This class costs $40 ($30 for Sitka Food Co-op members who are current on their dues), and the registration deadline is 11:30 p.m. on Saturday, Jan. 25. More classes in the series will be announced as their information is finalized.

Sitka Kitch to host Winter Baking Series: Bagels With Robin Sherman class on Jan. 28

Learn how to make bagels in the second class of the new Winter Baking Series at the Sitka Kitch. The Bagels With Robin Sherman class takes place from 5:30-8:30 p.m. on Tuesday, Jan. 28, at the Sitka Kitch community commercial kitchen. Please note this is an earlier starting time than our usual night classes, since bagels can take three hours to make.

Robin Sherman grew up in New York City and started baking as a kid. She is enthusiastically pro-gluten and enjoys exploring new bakeries whenever she travels. Warning: she has strong opinions about appropriate flavors and ingredients for bagels. Fruit does not even belong in the same sentence with this authentically chewy, round, boiled New York bread specialty.

The registration deadline is 11:30 p.m. on Saturday, Jan. 25. Space is limited, so register early to secure your place in the class. We need at least eight students to register and pre-pay to make this class happen. The class costs $40, which is part of our new all-inclusive fee system (you no longer have to pay a class fee to register, then a separate food/supply fee). Scenes from the Sitka Kitch class Rainforest Recipes AIP Pizza With Kate DesRosiers

Students learned how to make a gluten-free pizza crust and a variety of different toppings for the pizzas during the Rainforest Recipes AIP Pizza With Kate DesRosiers class held Saturday, Dec. 14, at the Sitka Kitch community rental commercial kitchen.

Kate, who has Type 1 diabetes, cooks using the auto-immune protocol (AIP), which helps people with auto-immune diseases such as diabetes or celiac disease find ways to enjoy alternatives to foods others can eat. With her diabetes, Kate has found it better to avoid certain types of grains and vegetables so her glucose levels don’t spike out of control. Others using the AIP may find the alternatives are easier to digest and are easier on the gastro-intestinal tract.

She taught the students how to make a basic crust using tapioca flour (or arrowroot starch), coconut flour, cream of tartar, baking soda, sea salt, olive oil, water, and a variety of herbs. She also taught the students how to make an artichoke-garlic pesto, an olive-garlic tapenade, and a nomato (beet) sauce to replace common toppings such as marinara sauce or alfredo sauce commonly used on pizzas. After rolling out the dough and doing a pre-cook, the students added the sauces and ingredients such as artichokes, onions, olives, spinach, pepperoni, and more, before putting the pizzas back in the oven for a final bake.

The Sitka Kitch is launching a new Winter Baking Series of classes in January. The first class is Sourdough Bread With Carolyn Rice, from 6-8:30 p.m. on Tuesday, Jan. 14, at the Sitka Kitch. Scenes from the Sitka Kitch class Oyster Shucking 101 with Renée Jakaitis Trafton

Students learned how to safely shuck an oyster without poking a hole in your hand, and they sampled a couple of sauces and made Oysters Rockefeller during the Sitka Kitch class “Oyster Shucking 101 with Renée Jakaitis Trafton” on Tuesday, Dec. 3, at the Sitka Kitch community rental commercial kitchen.

Renée, who is chef-owner of Beak Restaurant, showed students the proper way to shuck an oyster, using oysters from Shikat Bay Oysters on Prince of Wales Island. She also provided recipes for making a cocktail sauce and a mignonette sauce. In addition, she showed students how to prepare Oysters Rockefeller, which adds garlic, wilted spinach, parmesan cheese and Pernod to the oysters before heating them in the oven.

In the next Sitka Kitch class offering, Kate DesRosiers will teach her Rainforest Recipes AIP Pizza class, using the auto-immune protocol (AIP) for people with auto-immune diseases such as celiac’s disease or diabetes, at 6 p.m. on Thursday, Dec. 12, and/or 3 p.m. on Saturday, Dec. 14, at the Sitka Kitch. These classes cost $40, and the registration deadline is 11:30 p.m. on Monday, Dec. 9, for the Dec. 12 class, and 11:30 p.m. on Thursday, Dec. 12, for the Dec. 14 class. Sitka Kitch offers Rainforest Recipes AIP Pizza class with Kate DesRosiers on Thursday, Dec. 12, and/or Saturday, Dec. 14

Do you have an auto-immune disease such as celiac disease or diabetes? Kate DesRosiers, who has Type 1 diabetes and operates Rainforest Rose Creations at the Sitka Farmers Market, will teach a Rainforest Recipes class on how to make AIP (Auto-Immune Protocol) pizza at the Sitka Kitch this month.

Kate will offer this class twice at the Sitka Kitch community rental commercial kitchen (located at the Sitka Lutheran Church kitchen, 224 Lincoln Street, enter back door through alley off of Harbor Drive). Her first offering will be from 6-8 p.m. on Thursday, Dec. 12, and the second offering from 3-5 p.m. on Saturday, Dec. 14. Depending on student registration, she may end up teaching the class once or at both times.

Over the past 29 years of living with Type 1 diabetes, Kate has experimented with and tested out hundreds of lower carbohydrate food and recipes. She focuses on gut balance and foods that work best for her body for optimal health and feeling good in her own experiences with auto-immune chronic illness. In addition to operating Rainforest Rose Creations, Kate also instructs weekly Zumba classes and is a skin care consultant with Rodan + Fields.

The auto-immune protocol (AIP) diet is a food-based approach to eliminating unwanted inflammation in a person’s body.  Kate DesRosiers offers this class for those interested in learning more about the AIP diet and recipes, as well as for those simply interested in a healthier, gluten- and dairy-free, delicious alternative to pizza. Have you harvested some fresh oysters in Southeast Alaska, but don’t know how to shuck them? Did you buy some fresh oysters, but want to learn new ways to prepare them?

Join Beak restaurant chef/owner Renée Jakaitis Trafton for the Sitka Kitch‘s Oyster Shucking 101 class from 6-8:30 p.m. on Tuesday, Dec. 3, at the Sitka Kitch community rental commercial kitchen (located at the Sitka Lutheran Church kitchen, 224 Lincoln Street, enter back door through alley off of Harbor Drive).

In this class, Renée will teach basic oyster shucking technique, safety precautions, accompanying sauces, and cooking with oysters. She will discuss various aspects of this tasty bivalve and then demonstrate how to safely shuck an oyster. After shucking, participants will eat some raw oysters to taste with cocktail sauce and mignonette, and then participants will learn to make Oyster Rockefeller.
